Thick Courgette and Leek Soup
So as previously mentioned the original courgette recipes post was big and difficult to read, so I’ve broken the recipes down into individual posts. Here’s the recipe for Thick Courgette and Leek Soup
1 tbsp olive oil
300g courgettes, sliced
150g leeks, chopped
2 potatoes, peeled and thinly sliced
1 onion, peeled and thinly sliced
1 clove of garlic, crushed
2 large tomatoes, deseeded and chopped
900ml home-made vegetable stock or filtered water
1 bay leaf
1. Heat the oil and garlic in a saucepan, add the courgettes, leeks, potatoes and onion and sweat for 3-5 minutes.
2. Then add chopped tomatoes, vegetable stock and a bay leaf
3. Bring to the boil, cover, then lower the heat and simmer for 25 minutes
4. Remove the bay leaf.
5. Pulse or purée to a smooth texture in a blender or food processor, blending in batches if necessary
It’s as simple as that. It’s wondeful with some crusty white bread and butter. And it freezes really well too..
