Family Friendly Recipes – Peanut Sauce
Ever since I was little I remember eating Peanut Sauce and pasta. It was a staple in our house. Quick and easy to make, and contained vegetables, dairy, protein and carbs, so an all round nutritional meal. I have got no idea where Mum got the recipe from…like with a lot of the recipes I cook these days that my Mum used to cook for us!
It sounds a bit of a weird recipe, but it tastes so good. Chris pulled a face at it when I first mentioned it to him, but he’s now been eating it for the last 12 years!!
8oz (200g) red skin peanuts
400g tin tomatoes
4oz (100g) cheese (I use mild cheddar), easier if grated, but that’s cos I don’t like big bits of cheese in mine. If you can’t be bothered, then that’s fine too!
1 green pepper, chopped into large chunks
Milk (the original recipe I have written down says 1/2 pint, but I think that is too much, so I just add ‘some’ until it looks a good consistency)
- Roast peanuts on a baking tray under the grill
- Put peanuts in a food processor, and blend
- Add tomatoes, green pepper, and cheese, and blend into a thick puree
- Add milk until a good thick consistency
- Transfer to a pan and heat gently
- Serve with pasta
I do all this in a food processor, but a hand-held blender would work too. If you don’t have either of these, then I would probably suggest grating the cheese, making sure the tinned tomatoes are well chopped (just stab a knife around in the tin to get rid of any big chunks), finely dice the green pepper, and chop the red skin peanuts. Mix it all together really well in a bowl before adding the milk.
N.B. For younger babies it might be an idea to ensure the peanuts are well chopped before adding the other ingredients to avoid choking hazards!
This is another meal that I am always amazed at how much of it Isla eats. I always just used to give her bits out of my bowl for her to eat while she had other bits of food….but now we have to make her her own portions as otherwise I’d barely get to eat any of mine! She loves it, and so do I!!
